"They say if you really want to understand a place its soul, its scars, its rhythm you sit down and eat with its people. Bourdain said that, and damn if he wasn’t right. I landed back in Santiago under the cover of night, checked into some no-frills motel with flickering neon and just enough hot water to remind you you’re still alive. A few hours of sleep, then straight into the streets with Pablo my guide, my local compass, my translator for the Chilean chaos I was about to dive into. We walked. We ate. We walked some more. Santiago unfolded itself in layers old colonial bones wrapped in graffiti, street vendors slinging empanadas like they were dealing secrets. Pablo told me stories of dictators, poets, and late night revelers. He laughed when I mentioned going out after midnight. You gringos are either brave or stupid he said. Maybe both. Day and night here are two different animals. By day, it's a sun-drenched canvas of history and hustle. By night, it hums with something raw, something electric and slightly dangerous. I got my steps in. I got my fill. And in between bites, I got just a little closer to understanding this city."

Excellent Santiago Foodie Tour
"Excellent foodie tour in Santiago Chile with Pablo. We have been on other Withlocals food tours around the world and must say Pablo was the best!
Walked through the food markets, Learned about much of the local history of the country. Then tasted different, unique, local foods, and had a wonderful lunch. Would recommend this foodie tour with Pablo for anyone who has time in Santiago!"
